The other day I saw a recipe for jam squares and since I had everything I figured I'd try them out. They were good! (much better than my photography!)
Strawberry Jam Squares
1 1/2 cups flour1 teaspoon baking powder
1/2 teaspoon EACH salt, cinnamon, nutmeg
1 1/2 cups oats
1 cup brown sugar
3/4 plus 2 tablespoons butter, cold & cubed
6 ounces strawberry jam or preserves
In a food processor, combine flour, baking powder, salt, cinnamon, nutmeg, oats and brown sugar. Pulse a couple times to mix. Throw in cold cubes of butter and pulse until mixture is crumbly. Press half crumb mixture into buttered 8-inch square baking dish. Spread with preserves and sprinkle remaining crumb mixture over top. Press down lightly.
Bake at 350 degrees for 30-35 minutes or until lightly browned on top. Serve warm or cooled.
The only thing missing from the recipe was a gallon of vanilla ice cream. It was a must. Warm, buttery, sweet strawberry jam squares and a big ol' scoop of vanilla ice cream melting on the side. Oh yeah.
