Pioneer Woman never lies. Never ever. I'd make anything she told me to, just because.
A few weeks ago she posted a recipe for a very simple salad dressing and I made it that day. And again 3 more times since! Honestly, you could drink this stuff (I'm pretty sure The Husband has been doing just that- how else can I explain how quickly this is leaving my refrigerator?!!!) The beauty of it is that it's made using stuff I always have so there is no extra trip to the grocery store to pick up any ingredients. I suggest you run, don't walk, to your kitchen right this minute to gather up everything you need to make this dressing. You won't be sorry.
Here is her recipe (with my alterations in parenthesis).
PW's Aunt Trish's Salad Dressing
3/4 cup olive oil or canola oil
juice of 2 lemons
4 tablespoons grated Parmesan cheese
1/4 teaspoon salt, plus more to taste (I liked more)
freshly ground black pepper (lots)
1/4 teaspoon sugar
dash of paprika (I used about 1/2 teaspoon)
dash of cayenne, if desired (oh I desired! yes I did!!!)
1 clove garlic, peeled (OK, I went way over with this and used 3-4 cloves)
Place all ingredients into a jar and shake. Store in the refrigerator at least 24 hours before serving (don't skip this step!).
I didn't have the heart to juice the lemons without first stealing it's zest... I think I'll make lemon blueberry scones this weekend. mmmmm.
If you have any dressing left, use it to make croutons! Trader Joe's sells the best sourdough cheese bread and I buy it every week just to make some croutons. I usually just use a melted butter/olive oil combo and some garlic salt, but the dressing was excellent!
