One of the things that caught my eye that day was this great glass canister, for, like, a buck or something. I decided when I got it home that it really needed some kind of a knob on the top- it was just too hard to grab the lid to get to what's inside. So I found an extra drawer knob I had leftover from a piece of furniture and my Gorilla Glue and just glued it onto the top. That glue is some great stuff- I've even put things into the dishwasher after attaching and it seems to hold just fine. A little bit of ribbon and a tag and it was done! Except then it looked kinda lonely so I had to fill it with cookies.
Oatmeal-date-cranberry-pecan cookies. Yum.
Oatmeal-Date-Cranberry-Pecan Cookies
(basic recipe from the Quaker Oats container)
1/2 pound butter, softened
1 1/2 cups flour
1 cup brown sugar
1 teaspoon baking soda
1/2 cup granulated sugar
1 teaspoon cinnamon
2 eggs
1/2 teaspoon salt
1 teaspoon vanilla
3 cups oatmeal
1/2 cup chopped dates
1/2 cup dried cranberries
1/2 cup toasted, chopped pecans
Beat together butter and both sugars until creamy. Add eggs and vanilla. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats, dates, cranberries and pecans. Drop by rounded tablespoonfuls onto cookie sheet. Bake at 350 degrees for 10-12 minutes or until golden.
I am not sure how many cookies the recipe made- The Husband was eating them as soon as they were cool enough to touch! It looked like about 4 dozen.
